Different salts for cooking and baking

Salt is an important seasoning in cooking and baking. We’re so used to its taste that unsalted or low-salt foods can easily seem bland—or even unpleasant. Most people usually get enough salt from their diet. What matters more is paying attention to the quality of the salt and making sure you don’t end up consuming far too much without noticing. A high salt intake may increase the risk of cardiovascular diseases.

Salt on Finnish tables

Salt is an imported product in Finland, and it comes to Finland from countries such as Spain, the Netherlands and Germany. Salt is obtained both from seawater and from salt mines. The salt crystallised in salt mines originally comes from seawater that became trapped underground millions of years ago.

Salts are ionic compounds. They most often consist of a positively charged metal ion and a negatively charged non-metal ion. Structurally, they are solid, crystalline substances held together by ionic bonds. Like other ionic compounds, salt solutions conduct electricity.

Although salt is a staple of the Finnish table, it’s worth paying attention to how much you consume. High salt intake is almost always linked to elevated blood pressure, which in turn is often associated with many other health issues. If you start limiting your salt use, your sense of taste will adapt to less salt within a few weeks.

Salt for different purposes

It’s a good idea to choose salt based on what you expect from its properties. One option is iodised mineral salt. Mineral salt differs from other salts because some of the sodium has been replaced with other minerals, such as potassium or magnesium, which do not raise blood pressure in the same way sodium does.

Some people consider sea salt healthier than table salt, but in composition it is also almost pure sodium chloride. Sea salt naturally contains only a very small amount of iodine and is usually not iodised, so in terms of iodine intake, iodised table salt is a better choice.

Regular salt, the so-called table salt, is the most commonly used salt. Sometimes salt is replaced with spices or seasoning blends. However, many spices and seasoning mixes also contain salt. This is good to keep in mind if you’re trying to reduce salt use. Each product lists its salt content, which is shown in the nutrition table according to current packaging labelling regulations.
