This pan is suitable for long simmering with liquid, for example in casseroles, do not use without liquid. The surface has an enamel layer which does not need to be greased as regularly as the cast iron surface alone, but dab the inside surfaces with oil or grease before each use.
Clean the cast iron with hot water and a dish brush, and if dirt has adhered more firmly to the surface, boiling water in the pan will loosen it. Do not use dishwashing detergent or put the pan in the dishwasher, this will remove the grease coating.
